Full disclosure: I saw these burgers on a favorite website and decided to make them last night. But, it rained and I’m not that dedicated a griller, so I did something I haven’t done in my entire life. I made meatloaf. The most delicious, moist, surprising, Asian flavored meatloaf. It’s true what they say about necessity being the mother of meatloaf. Or rain being the mother of invention. Anywho, I served it with sticky rice and salad with Andra’s Ginger Vinaigrette and I was a rainy day hero.
Chinese Meatloaf
3 Tbsp hoisin sauce
3 Tbsp Chinese Five Spice
1 Tbsp freshly grated ginger
2/3 cup Panko breadcrumbs
2 eggs
4 scallions, thinly sliced
1 bunch, about 1/2 cup chopped cilantro
1.5 lbs lean ground beef
Preheat oven to 350°. Mix all ingredients and form into a 9 x 5 loaf shape on a foil covered baking sheet. Brush all over with about another Tbsp of hoisin. Bake for 40 minutes, or until the internal temperature reaches 160°. Let rest for a few minutes before slicing and serving.
